2021 Birds on the Hill Prosecco


Hand picked early to maintain maximum freshness and acidity then cold fermented and left on yeast lees to add a small amount of richness and processed using the charmat method. Flavours of citrus and nashi pear with a lively sherbet acid balancing the wine. A fresh sparkling wine made to be enjoyed now perfect match for cured meats and fruit driven appetisers such as prosciutto wrapped melon.
